The difference between sparkling wine and secco

Sparkling wine gets its carbonation through a second fermentation in the bottle. In the production of the secco, also called pearl wine, carbon dioxide is manually added to the wine. The sparkling wine therefore has an integrated and more intense perlage than the secco.

The early harvest guarantees the typical taste of sparkling wine. In order to achieve this taste, it is important that the grapes still contain a lot of acidity and not too much sweetness .
